Makes 1 dozen

Dry Grains you need to mill:
1.5 C of Soft White Wheat Grain should make approx amount of flour below.
(it can be 3/4 SWW & 3/4 Hard Red for a heartier muffin)

Preheat oven to 400 while mixing ingredients.

Mix together all dry ingredients first:
2 -2 1/2 C Flour
1/2 C succanat or brown sugar
3 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp allspice

Spray muffin tins with non-stick spray.

Make a ‘well’ in the middle of the dry mix and add :
2 TBS oil (not olive)
1 egg
1/3 C Apple Butter

Mix ingredients and quickly pour into prepared muffin tins. Bake approx 20 minutes. If you don’t have enough batter to fill all 12 muffins - fill empty ones with water to keep from ruining your muffin tin.
