Crunchy Whole Oat Organic Granola

Crunchy Whole Oat Organic Granola

Makes 8 cups

 

 

Gather all ingredients:

Dry Grains needed:   8 Cups of Organic Whole Rolled Oats

Optional to toast with oats: Raw Almonds, any favorite nut

1/4 C - butter

1/4 C - canola oil

1/4 - C honey

1/4 C - corn syrup

1/2 C - Brown sugar

1/2 C - EcoSweet Evap. Cane crystals

1tsp - vanilla extract

 

Melt butter and oil together in large sauce pan

add all sweetener ingredients (not dry oats/nuts or vanilla) to melt

!! - don't be tempted to add water unless you want a light fluffy granola and then add only a max of 1/8 C - !!

Stir often and bring to light boil for 1 min - then turn off heat but keep on burner - keep an eye on it

Preheat overn to 350 degrees and prepare two jelly roll pans (cookie sheets with edges) with aluminum foil and spayed with non-stick spray.

NOW stir into the melted mixture the tsp of vanilla

Put 4C of oats (almonds, nuts) in a large bowl with ample room to mix

Pour in 1/4 of mixture and mix well - then add the remaining 4 C oats and nuts and slowly mix in remaining melted mix.

Make sure to lift from the bottom of the bowl to make sure all gets covered.

Spread into one layer on each pan.

Toast 8 minutes remove and mix lightly

Toast another 8 minutes - then remove to cool.

Once cooled use aluminum foil to break into crunchy chunks.

Store in a zip-lock bag in pantry for up to 2 weeks (ours is never around that long to worry!)

Enjoy with milk, vanilla yogurt, or on top of fruits with whipped cream for an easy light dessert!

Variation:

Use one pan with higher rims and pack the granola down like a meatloaf. Then omit stirring and bake 16 minutes - remove and slice into 'bars' while it is still slightly warm. When totally cooled, you can break apart granola bars!

Add in some raisins, craisins, chopped dried fruit and/or coconut shreds for a different treat!
